Ron Mahay came up as an OF for the Red Sox and played in a few MLB games in 1995 before switching to a pitching career that continues to this day.

There are probably a lot of examples of pitchers who started out as non-pitchers in the minors. Joe Nathan and Tim Wakefield come to mind.
